Ask any Kathmandu local where to eat momo and this name comes up first. Everest Momo Center in New Baneshwor has been serving what many consider the city's definitive buff momo for decades. The magic is in the simplicity — hand-wrapped dumplings with perfectly spiced buffalo filling, steamed to order and served with a fiery tomato-sesame achar that has a cult following. The restaurant is nothing fancy — plastic chairs, fluorescent lights, and a queue out the door at peak hours. A plate of 10 steamed momo costs around Rs. 150-200. They also do fried and kothey (pan-fried) variations. The jhol momo (soup momo) in spicy broth is the local's secret order. Open daily from 10am to 8pm. Go before noon to avoid the lunch rush.
